In certain rare (and wonderful) cases, labels need to be translated for easier handling, but no structures need to be removed or rebuilt. These are fairly easy to deal with, though many current tools make this really simple kind of work fairly complex.

Removing structures
Sometimes recipients want less structure than was provided in the original document - stripping out structure the recipient considers unnecessary.

Constructing structures
Sometimes the recipient wants the information contained in the document, but needs some pieces atomized. Dates - with all of their textual formats - are a common target for this kind of processing.
